What's for Breakfast?

(didn't take a picture of the scones, so I was browsing my old photos and thought this one was appropriate for the title!ha!)


Yesterday I made THESE cinnamon breakfast scones. I made them with gluten-free flour and had to add about 1/4 cup cream to the mixture (b/c I was out of milk, and cream just makes anything better anyways!) b/c gf flour absorbs more liquid. They turned out amazing...soft and tender. MMM... This morning I'm having a leftover scone. Pair that with coffee...nothing better on a snowy day! :)

Could you tell me what you did to make them gluten free? I am not finding anything 'sweet' gluten-free foods that taste good.

Gia, I used a gluten free mixture of flours that I make from the "Gluten Free Artisinal" cookbook. I can email you that flour recipe, if you want. Anyhow, I just used that, plus 2 tsp. xantham gum and, like I said, added some cream to make it the right consistency..like 1/4 cup.

I have tried so many yummy sweet things! Too many! ha! Do a google search for Alton Brown's gluten free chocolate chip cookies. They are the best ever! My friend with celiac's said if she didn't know me better, she'd have thought they were regular flour cookies! Her hubby tasted one and told her she couldn't have any, b/c they were regular! :) I have really had such luck with substituting gf flour for regular...but the flour mixture makes all the difference.

Your comment made me smile! Most people think I'm nuts but your ideal vacation sounds much like mine... instead of Alaska... I would go to the UP of MI. ; )
